Enjoy "La sopa de Nadal"

There is no better way to celebrate Christmas in Mallorca than to enjoy Sopa de Nadal or stuffed soup, a traditional dish made with snail-shaped pasta, meat, vegetables and greens. Don't start the New Year without eating a few bowls of this delicious Christmas treat! We leave you here the traditional recipe if you want to surprise your guests:

INGREDIENTS:

  • 1/2 kg mixed minced meat
  • 1 package galette soup (large mussels for filling)
  • 1 egg
  • Marjoram (Moraduix)
  • Salt and pepper
  • 1 slice of bread soaked in milk
  • Optional: fresh grated truffle or a little goose liver
  • A good hearty broth: with chicken, bone-in beef, a marrow bone, rack of lamb, leeks, carrots, a sprig of celery and salt, simmer for about two hours, strain and reserve the broth, you can use meat for croquettes, cannelloni...

PREPARATION:

  1. First season the meat for the soup. In a bowl we add the beaten egg, the drained bread, the chopped marjoram, the salt, the pepper and the meat, mix well and let it rest so that the meat absorbs all the flavors.
  2. Then you pour the soup, either with a coffee spoon, pressing the meat well into the bowl, or with your finger, with clean hands, of course.
  3. Once you fill the soup, you can freeze it in a tupperware to cook at another time or make the same day. In this case, heat the broth over the heat and when it boils, add the soup and let it cook for about 15-20 minutes. Serve very hot.
  4. If you have leftover meat from the filling, you can make meatballs to add to the broth at the same time as the noodles and serve with the soup.
